Fruit Pancakes

A healthy and filling recipe for anyone looking for something sweet at weekend breakfasts!

Ingredients:

  • 1 cup (about 200 ml) milk
  • 1 egg
  • 1 cup (about 200 ml) wholemeal flour
  • 1 sachet vanillin
  • 1 sachet baking powder
  • Peach/blueberries (use any fruit you like)

Method:

  1. In a bowl, whisk 1 cup of milk and 1 egg. Then add 1 cup of wholemeal flour to the mixture and mix well. Add the vanillin and baking powder and whisk again.
  2. Add finely chopped fruit to the prepared mixture and stir everything together with a spatula or spoon.
  3. Take a dessert spoon of batter and cook it in a greased pan over medium heat. Keep cooking until both sides are nicely golden.
  4. Make sure each pancake has fruit in it. This way you will find fresh, tasty fruit in every bite.
  5. Place the fruit pancakes on a serving plate. If you like, you can sweeten them with a little honey or maple syrup.

Fruit pancakes made with these quantities are ideal for a breakfast for 5 people. Each portion is only 150 calories, a light way to start the day. Enjoy!
